Preserved Mustard Greens and Minced Pork Puff
Flaky Chinese pastry made by laminating oil dough around shortening, rolled into spirals and filled with savory preserved mustard greens and minced pork, baked until shatteringly crisp.
Instructions
- 1

Mix the filling with seasonings first, divide it into 10 round balls, and bake them in the oven to set their shape.
- 2

Place in the Gaobike T30 oven at 180 degrees for 18 minutes to set shape.
- 3

After mixing the oily dough evenly with a dough mixer, divide it into small portions of 28 grams each. Press the oily layer into a mass with a spatula and divide it into small portions of 15 grams each.
- 4

Wrap the oily dough around the oily pastry to form a ball, then roll it into an olive shape and curl it up.
- 5

After rolling into an olive shape, roll it out lengthwise and then roll it up again, as shown in the picture. After folding it in half, knead it into a round shape again.
- 6

Use plastic wrap when rolling it out, so the oily dough is less likely to stick to the board and rolling pin, then wrap the preserved vegetables and meat inside.
- 7

Prepare the egg yolk mixture, using only the yolks, not the whites. Just dip the top a little to create a small yellow hat shape, and sprinkle black sesame seeds on top.
- 8

Bake in the Gaobike T60 oven at 155 degrees for 30 minutes before taking it out.
- 9

The puff pastry has distinct layers, is crispy and delicious, and so flaky that it crumbles.
