Pueraria and Crucian Carp Soup

Pueraria and Crucian Carp Soup

Kudzu root and carrot simmered with pan-fried crucian carp in a long, slow braise, producing a milky soup with earthy sweetness.

Instructions

  1. 1

Peel the kudzu root and slice it. This kudzu root was given to me by someone, it’s very large, I only used half of it to make soup. Peel the carrot and cut it into small sections.

  2. 2
    Step image

The crucian carp bought from the market has a layer of black membrane inside its belly.

  3. 3
    Step image

This layer of black film must be scraped clean, remember.

  4. 4
    Step image

After cleaning the crucian carp, use kitchen paper to brush off the surface moisture and rub salt on the fish. Add oil to a multipurpose pot, heat it, and then add the crucian carp.

  5. 5

Pan-fry both sides until golden brown

Put all the ingredients except the salt into the soup pot. Bring to a boil over high heat, then simmer over medium-low heat for 1 hour.

    Finally, add salt to taste.
