Pueraria Corn Pork Rib Soup
A soothing Cantonese soup of pork ribs simmered with starchy kudzu root, sweet corn, carrot, and red dates, yielding a naturally sweet, nourishing, everyday tonic broth.
Instructions
- 1

Peel the arrowroot and cut it into thick slices. Some people prefer to use a large piece for making soup, and then slice it after the soup is cooked, saying that sliced arrowroot does not taste good after being cooked in soup. In fact, as long as you buy arrowroot from a good origin, the texture of sliced arrowroot in soup does not change at all.
- 2

Peel and chop the carrots, cut the corn into short segments, remove the pits from the red dates, and peel the ginger.
- 3

After the water in the pot boils, pour in the ribs and cook briefly. You can see a layer of foam rise to the surface. Turn off the heat, pour out the water, and rinse with clean water. This way, the soup will be clearer, sweeter, and more delicious.
- 4

Add arrowroot, corn, carrots, red dates, and slices of ginger to the soup pot, then pour in water.
- 5

Add the blanched spareribs.
- 6

Cover the pot, bring the water to a boil over high heat, then reduce to low heat and continue to simmer for an hour and a half.
- 7

Finally, add salt to taste.
