Pumpkin and Red Date Flowering Steamed Bun
Naturally leavened pumpkin buns that bloom open like flowers as they steam, sweetened with sugar and studded with red dates for a cheery, mellow-sweet treat.
Instructions
- 1

Homemade fermentation.
- 2

Take an appropriate amount and ferment it with warm water until it blooms.
- 3

Add an appropriate amount of flour, mix evenly, and let it rest and ferment overnight.
- 4

The yeast dough has risen particularly well.
- 5

Peel the pumpkin, wash it clean, cut it into slices, and steam until cooked.
- 6

Add half a spoon of sugar, mash the pumpkin into a puree, and let it cool.
- 7

Add a small bowl of flour, put in the cooled pumpkin puree, and add a little baking soda, mixing it into a flaky consistency.
- 8

Knead into a smooth dough and let it rise until it doubles in size.
- 9

Well-proofed dough is full of honeycomb-like holes.
- 10

Wash the red dates, remove the pits, and cut them into small dice.
- 11

Knead the noodles open and put the diced red dates inside, knead to release the air, and knead several more times.
- 12

Roll the kneaded dough into a long strip, then pull it by hand into evenly sized pieces.
- 13

Fold by hand, with the opening facing up.
- 14

A single embryo is ready.
- 15

Let the prepared raw dough undergo a second proofing.
- 16

Boil water in a pot, and after the water boils, put in the prepared dough pieces and steam on high heat for 20 minutes, then let sit for 5 minutes.
- 17

When it starts boiling, the slowly emerging aroma of jujube fills the air, and each one is fluffy and soft, fragrant and sweet.
