Pumpkin Red Bean Paste Cake
Soft pumpkin cakes enriched with glutinous rice flour and wrapped around sweetened red bean paste, pan-fried until golden outside with a tender, chewy crumb.
Instructions
- 1
Soak the red beans overnight, cook them using the rice cooking function of a rice cooker, then add an appropriate amount of sugar and mash them for later use.
- 2
After steaming the pumpkin until cooked, mash it into a puree. According to personal taste, add an appropriate amount of sugar, and mix it evenly with glutinous rice flour and wheat flour. The pumpkin puree has a certain amount of moisture, so add water as needed depending on the dryness or wetness of the dough, and knead it into a smooth dough.
- 3
60g of dough, 40g of red bean paste. Wrap the red bean paste in the dough, brush oil on the mooncake mold, and press to shape.
- 4
After the water boils, steam for 15 minutes, and the soft, glutinous, and sweet pumpkin red bean paste cake will be ready.
