Qingdao Wild Wontons
Qingdao street-style wontons with a peppery pork and shrimp filling whipped in one direction until springy, wrapped freehand and boiled for a bouncy, ocean-sweet bite.
Instructions
- 1

Cut the fatty and lean pork into pieces, take the shrimp meat from the fresh shrimp, remove the back and devein, slice the ginger, and chop the green onions.
- 2

Put the pork, shrimp, and ginger slices into a blender, and add light soy sauce, cooking wine, refined salt, fine granulated sugar, chicken essence, and white pepper powder.
- 3

Grind into fine granular minced meat, and add chopped green onions.
- 4

Add an appropriate amount of salad oil.
- 5

Stir thoroughly in the same direction.
- 6

Wrap it in wonton wrappers in the style you like.
- 7

Line up neatly.
- 8

Add the wontons to boiling water and cook for 5 minutes.
- 9

Take a large bowl, pour in an appropriate amount of light soy sauce, vinegar, fine granulated sugar, refined salt, and sesame oil, and mix with the broth used to cook the wontons.
- 10

Portion out the prepared wonton soup and wontons.
- 11

Just sprinkle some more crushed seaweed, and if you like, you can also add chopped cilantro, shredded egg, or shredded pickled mustard.
