Quick Pickled Green Beans
Chopped beans are salted to draw out moisture, then covered with a hot spiced vinegar infusion. Sourness arrives in days rather than weeks of crock time.
Instructions
- 1

Select and wash the fresh green beans, then chop them (mainly to allow the flavors to penetrate).
- 2

Put the cut green beans into a small bowl with a lid.
- 3

Add fine salt, mainly to draw out the moisture from the green beans, making them crisper and more tender.
- 4

Pour cold water into the pot until it covers the green beans, add red chili peppers, ginger slices, and Sichuan peppercorns, and pour in white vinegar (the crucial step).
- 5

Boil to reduce internal heat.
- 6

While hot, pour the cooked broth into a small bowl containing green beans.
- 7

Put the lid on, wait a few hours, and it will be ready.
- 8
Very sour, very powerful.
