Radish and beans
A humble northern-style pickle that pairs salted radish cubes with soybeans, cilantro and a touch of spice, chilled briefly before serving alongside congee or steamed buns.
Instructions
- 1

Soak the soybeans overnight, and cut the radish into pieces and salt it (remember to take photos)
- 2

Pour out the water fermented from the radish, cook the soybeans with Sichuan peppercorns, star anise, and a tablespoon of salt until done. Take them out and let them cool, then mix them together.
- 3

Wash the cilantro, drain the water, chop it, mix it in, add 1-2 salt, tilt the bowl a few times, shake the bowl, and mix it evenly.
- 4

Cover it, put it in the refrigerator, and it can be eaten in one day.
