Red Bean and Egg Pancake
Sweet, fluffy egg pancakes dotted with honeyed red beans and lightly leavened with baking powder, griddled over low heat until golden, pillowy, and gently chewy.
Instructions
- 1

I used ready-made molasses beans, but everyone can also make them themselves.
- 2

Beat the eggs, add flour, white sugar, and water, and stir into a smooth batter without lumps.
- 3

Finally, add baking powder and mix evenly.
- 4

Preheat the non-stick pan, pour in a little oil, shake to coat evenly, and pour in the batter.
- 5

Sprinkle in the molasses beans, and slowly pan-fry over low heat until small bubbles form, then you can flip it.
- 6

Slightly pan-fry the side with the sweet beans until both sides are golden.
- 7

Soft and fluffy, it's simply delicious when eaten hot.
