Red Bean and Lotus Root Soup
A nourishing Cantonese soup slow-boiling adzuki beans, lotus root, dried tangerine peel, and pork bones for two hours, yielding a smooth, gently sweet broth.
Instructions
- 1

Main materials.
- 2

Soak and clean the red beans. (I usually soak them for 30 minutes, worried about preservatives and stuff.)
- 3

Peel the lotus root and cut it into small pieces.
- 4

Soak dried tangerine peel in hot water until soft, and scrape off the white membrane. It is said that the white membrane is irritating and hot.
- 5

Fan the bones in the water, washing away the floating foam.
- 6

Put all the ingredients into a soup pot, add an appropriate amount of water, bring to a boil over high heat for 10 minutes, then simmer over low heat for 2 hours.
- 7

After cooking, use a skimmer to remove the fat.
- 8

Just season with salt. (My family usually doesn't add salt to slow-cooked soup because the soup is naturally sweet.)
- 9

Strengthen the spleen and stomach, tonify qi and blood, clear heat and remove dampness.
