Red bean bun
Fluffy steamed buns leavened with yeast and sweetened with soft-cooked adzuki beans folded into the dough, steamed tall for a mildly sweet, speckled, pillowy crumb.
Instructions
- 1

Cook the red beans until soft and mushy, then let cool to 35 degrees.
- 2

Mix flour, white sugar, and yeast powder.
- 3

Pour in the red beans and broth.
- 4

Knead the dough to a medium softness and firmness.
- 5

Let it ferment without stirring.
- 6

In summer, the fermentation time is short, and it rises quickly, forming a large honeycomb shape.
- 7

Take a portion and knead it into a round bun.
- 8

Place into the steamer for the second fermentation.
- 9

After fermentation, steam on high heat for 20 minutes, then let it sit for 3 minutes before removing from the pot.
- 10

Slice it and have a look; the texture is soft and fluffy, and the fragrance of red beans is very enticing.
- 11

Breakfast staple.
