Red Bean Paste Glutinous Rice Ball Soup

Red Bean Paste Glutinous Rice Ball Soup

A cozy dessert soup of red beans pressure-cooked with rock sugar into a sandy-sweet paste, served warm with chewy white glutinous rice balls floating on top.

Instructions

  1. 1

Rinse the red beans and put them into the inner pot of the electric pressure cooker, then add an appropriate amount of water. Note: When cooking red beans in an electric pressure cooker, you can just put them directly in the pot; if using a regular pot, you need to soak them overnight in advance.

I use the Giboni electric pressure cooker. Turn the top handle to the 'Quick Pressure Mode,' rotate the function button to the 'Mixed Grain Porridge' function, and it automatically enters the working mode for 40 minutes. The Giboni electric pressure cooker reaches pressure very quickly and you cannot hear any sound; it works very quietly.

Use this time to make some glutinous rice balls. Mix glutinous rice flour with sugar evenly, add warm water and knead into a dough, take about 3 grams of dough and roll it into a ball. Cook in boiling water until they float, then boil for another minute, take them out and rinse in cold water for later use.

  4. 4
    Step image

The cooked red beans are already very soft and break apart with a single press.

  5. 5
    Step image

Take half of the red beans and put them into a blender to crush into red bean paste, then pour it back into the pot.

  6. 6
    Step image

The Gibani electric pressure cooker comes with a 'hot pot' function, allowing you to freely choose the heat level. I used level 7 heat, added brown sugar, and brought the red bean soup to a boil.

Pour in an appropriate amount of glutinous rice flour water, stirring while pouring until the desired thickness is achieved. Note: The glutinous rice flour water is prepared by mixing 10 grams of glutinous rice flour with 50 grams of water.

  8. 8
    Step image

Once it boils, you can turn off the heat.

  9. 9
    Step image

Transfer the cooked red bean paste into a bowl, add the cooked glutinous rice balls, and sprinkle a little osmanthus on top. Sweet and sticky, it's super delicious.

    Give it a try.
