Red bean sweet rice
Old-fashioned sweet sticky rice steamed until glossy, then beaten with sugar and optional lard while folded with sweet red bean paste for rich, dessert-like comfort.
Instructions
- 1

Wash the glutinous rice, soak it in water overnight until the water covers the rice, then drain it.
- 2

Steam for about 20 minutes once the water is boiling (you can drizzle some hot water midway to keep the glutinous rice moist).
- 3

Add 50 grams of white sugar (adjust the amount of sugar according to personal taste, and you can also add an appropriate amount of lard).
- 4

Pour in the freshly steamed glutinous rice, and stir continuously from the bottom until the sugar dissolves.
- 5

After stirring and breaking up the glutinous rice, gradually add 50 grams of hot water in batches, mixing from the bottom until the glutinous rice has completely absorbed the water.
- 6

Line the bottom of the bowl with plastic wrap (you can also evenly spread lard on the bottom of the bowl to make it easier to unmold).
- 7

First, spread a layer of glutinous rice at the bottom of the bowl and press it firmly, then place 100 grams of red bean paste in the center (the amount of red bean paste can be adjusted according to personal preference).
- 8

Finally, spread all the remaining glutinous rice in the bowl and press it firmly.
- 9

After the glutinous rice cools, turn it upside down onto a plate.
- 10

Garnish with red dates, walnuts, white almonds, goji berries, and melon seeds (choose garnish ingredients according to personal taste).
- 11

Once the water boils, steam for about 10 minutes (the exact time depends on the strength of your stove).
