Red Date and Red Bean Soup
A humble adzuki bean soup where soaked beans are first blanched to remove beany notes, then slow-simmered with red dates until creamy, sweetened optionally with sugar.
Instructions
- 1

Rinse the red beans clean and soak them overnight.
- 2

Put the red beans into a pot, add water and bring to a boil, then pour out the boiling water. This can remove the beany smell.
- 3

Add fresh water to the pot, enough to cover the red beans by a good margin, add a few cleaned red dates, continue to boil on high heat for about ten minutes, then reduce to low heat and cook until the red beans are fully cooked.
- 4

If you like it sweet, you can also add white sugar or brown sugar.
- 5

I like sweetness, but usually for health reasons, I don’t add sugar and eat it like this directly. It’s very healthy and nutritious.
