Red Date and Water Chestnut Cake
Red dates are simmered and sieved into fragrant date water, mixed with water chestnut flour, and cooked in layers, setting into a translucent, bouncy cake with sweet date fragrance and a Q-soft bite.
Instructions
- 1

100 grams of pitted red dates.
- 2

Add 500 grams of water to the electric cooker, bring it to a boil, and let it cool.
- 3

A small cup of horse hoof powder.
- 4

Pour the smashed red date pulp into a fine mesh strainer, and use a large spoon to press out the red date juice and pulp. Be careful not to get the date skins into the bowl, as it will affect the taste!
- 5

Use the same cup you just used to measure the hoof powder to fill two cups of red date water.
- 6

Mix the powder evenly with the red date water.
- 7

Add two cups of water to the electric cooking pot, put in an appropriate amount of brown sugar powder and bring to a boil, then scoop a spoonful of starch paste and pour it into the boiling brown sugar water, stirring until it thickens.
- 8

Stir the thickened brown sugar water together with the rice flour slurry, pour it onto a plate once the water boils and cook until done. If there is too much, you can steam it in small batches using molds.
- 9

Place in the mold, bring water to a boil, and steam for six to eight minutes.
- 10

Let it cool and remove it from the mold, then it's ready to eat!
