Red Date, Peanut, and Black Rice

Red Date, Peanut, and Black Rice

Glutinous rice dyed near-black with maple leaf juice, slow-cooked with soft peanuts and sweet red dates for a chewy, faintly herbal, gently sweet rice dish.

Instructions

  1. 1
    Step image

Wash the glutinous rice clean, soak it in maple leaf juice for one to two hours, ideally until the rice can no longer absorb any more liquid. If you're in a hurry, the soaking time can be shortened.

  2. 2
    Step image

Pre-cook the peanuts in an electric pressure cooker until soft.

  3. 3
    Step image

Prepare red dates and remove the pits.

  4. 4
    Step image

Put the glutinous rice and red dates into the pot used for cooking peanuts. The water from the peanuts can be kept, so use a little less water when cooking the peanuts. It's best if there is basically no water left after cooking; at this step, add some maple sap to cook the rice.

    The rice is cooked.

Just add some sugar and mix well.
