Red Mushroom Pigeon Soup
Squab simmered an hour with russula mushrooms, whose soaking water deepens the broth into a rosy-red, mineral-rich soup with an earthy fragrance.
Instructions
- 1

Quickly rinse the red mushrooms with clean water, then soak them in purified water for ten minutes. Red mushrooms should not be soaked or cooked for a long time.
- 2

Clean one pigeon and cut it into four pieces
- 3

Blanch the pigeon and scoop it up
- 4

Put an appropriate amount of water in a soup pot, add the blanched pigeon, then also add the water used to soak the dried shiitake mushrooms. Add ginger slices, cover with a lid, bring to a boil over high heat, then reduce to low heat and simmer for 1 hour.
- 5

Soup that has been simmered for 1 hour, as shown in the picture
- 6

Add the soaked red mushrooms to the pigeon soup, bring it to a boil again, then reduce to low heat and simmer for 15 minutes, then add a little salt to taste.
- 7

The soup is bright red, and the rich aroma is very delicious.
