Refreshing and tasty sesame sauce cold noodles
Cool wheat noodles tossed in a silky sesame paste sauce thinned with water, topped with cucumber and garlic for a refreshing summer bowl.
Instructions
- 1
Put the sesame paste into a bowl, gradually add cold boiled water or purified water to thin it, until the consistency is like plain yogurt, then add an appropriate amount of salt and stir until dissolved.
- 2
Cut the cucumber into thin strips and chop the garlic into a paste; there are many varieties of cucumbers. This time I used a variety with a light-colored skin, a large body, and a lot of juice. The skin is relatively coarse and hard, so it is used after peeling.

No restrictions on the type of noodles, whether thick or thin, plain or mixed grains, all are acceptable.
- 4
After the water boils, put the noodles into the pot and cook until there is no white core, then take them out.
- 5
Rinse in cold water 2-3 times, and the noodles become cool and crisp again.
- 6
Scoop an appropriate amount of noodles into a bowl, drizzle with sesame paste, sprinkle with cucumber strips and minced garlic, mix while eating; it is cool and refreshing, and a little rice vinegar can also be added for extra flavor.
