Refreshing Summer Salad
Smashed cucumber chunks are sugar-cured and chilled, then dressed with garlic, vinegar and a sizzling oil finish, making the ultimate icy, sweet-tangy relief on scorching summer days.
Instructions
- 1
Put the cucumbers in a freshness-preserving bag and smash them with a rolling pin.
- 2
Two tablespoons of sugar, stir evenly. Cucumbers marinated with sugar this way will be sweeter and crunchier.
- 3
Place the cucumber in the refrigerator and marinate for 30 minutes.
- 4
Prepare all the ingredients. One cucumber and one large clove of garlic are enough. Otherwise, the garlic flavor will be too strong.
- 5
Pour hot oil over the seasonings and mix evenly with a spoon.
- 6
A spoonful of light soy sauce, a spoonful of aromatic vinegar, a small amount of salt, a little sugar, an appropriate amount of sesame oil, mix again with a spoon.
- 7
Put all the prepared ingredients into a large bowl.
- 8
Mix the sauce and ingredients evenly with your hands. Done!
