Rice Cooker Braised Pork with Rice
Effortless rice-cooker one-pot where chewy cured pork, shiitake mushrooms, and carrot steam atop rice with mushroom-soaking broth, infusing every grain with smoky, savory richness.
Instructions
- 1

A collection of ingredients. You can choose your preferred side dishes, as long as they don’t easily turn mushy when cooked.
- 2

Soak dried shiitake mushrooms in advance. First, soak them until they are half soft, then wash them clean, change the water and soak again. The water from the second soak can be used for cooking rice.
- 3

Cut the carrots into pieces, cut the large shiitake mushrooms into smaller pieces, and small shiitake mushrooms don’t need to be cut.
- 4

It is best to soak the cured meat for half an hour to remove excess salt, scrape it clean, and cut it into cubes.
- 5

Rinse the rice clean and add the water from the second soak of the shiitake mushrooms. Since there are more side dishes, the amount of rice should be slightly less than usual.
- 6

Wash the peas and corn and add them, then add the carrots, shiitake mushrooms, and diced cured meat.
- 7

Add 2-3 tablespoons of soy sauce.
- 8

Slightly mix the rice and side ingredients, then spread them evenly. Cook the rice as usual.
- 9

After the rice is cooked, let it sit covered for 5-10 minutes before opening the lid, then mix it well and it’s ready to eat.
