Rock Sugar Bird's Nest

Rock Sugar Bird's Nest

A delicate tonic where premium bird's nest is soaked until fully expanded, then double-steamed with precisely measured water and rock sugar for a smooth, glossy, jelly-like texture.

Instructions

Bird's nest soaks for about 3 hours, and nine pieces of Yan Yan bird's nest swell very well, capable of expanding 6-8 times in size.

After filtering the soaked bird's nest, put it into a stewing pot with water and rock sugar and steam for one and a half hours. This step is very important. Secret tips: 1. Rock sugar should not be added at the start because adding it early makes the bird's nest too thick. 2. The water should ideally be exactly 100-110 ml. If the bird's nest is more than 3-5 grams, the water should be proportionally increased. 3. If the bird's nest you bought already contains moisture (unscrupulous), you should reduce the water accordingly (actually, I strongly advise against consuming such bird's nest because it easily molds and spoils).

Add rock sugar and cut red dates to remove the pits. Pour in hot water and simmer over a water bath for an hour.

The finished product is done, very simple, right?
