Rock Sugar Loquat Soup First Release
A gentle, soothing dessert of fresh loquats steamed with rock sugar until soft and syrupy, traditionally enjoyed in China for soothing the throat and easing coughs.
Instructions
- 1

Wash the loquat clean of fuzz, and remove the stem and seeds.
- 2

Add a few pieces of rock sugar, the amount of sugar according to your own preference. Mine is yellow rock sugar.
- 3

Steam it in the pot. I did it while cooking leftover rice porridge, but it can also be done when cooking rice, or it can be steamed separately in a pot.
- 4

My porridge is ready, I took out the loquats, they still look fine, and some rock sugar hasn't even dissolved yet. It's okay, just press it down with a spoon and it will be fine.
- 5

Just pressing it will turn it into mud. No water was added; the inherent moisture, along with the steam in the pot, provides enough water.
