Rock Sugar White Fungus and Snow Pear Soup
White fungus cooked with snow pear until soft and thick, then sweetened with rock sugar and dotted with goji berries in a syrupy, soothing dessert soup.
Instructions
- 1

Soak the wood ear mushrooms in advance.
- 2

Soak the white fungus and remove the roots, then tear it into small pieces. Peel and core the snow pear, then cut it into chunks. Wash the goji berries and soak them in water for later use.
- 3

Put water in a soup pot and bring it to a boil to cook the white fungus, using more water—about twice the height of the fungus.
- 4

After the white fungus boils, add the snow pear pieces.
- 5

After the pear pieces come to a boil, adjust to medium heat and cook for 1.5-2 hours until the white fungus is soft and sticky and the soup is thick, then add the soaked goji berries.
- 6

Add rock sugar; this depends on personal preference.
- 7

Bring it to a boil again, turn off the heat once the rock sugar melts, finished product.
