Roujiamo
The iconic Chinese pork burger: slow-braised pork belly chopped with green chili and stuffed into a griddle-toasted flatbread; rich, juicy and crumbly-tender.
Instructions
- 1
Cut the pork belly into thick slices and fry them in a pan to release the oil.
- 2
Stir-fry the pork until it releases its fat.
- 3
Heat oil in a pan, add Sichuan peppercorns and star anise, and for those who like it spicy, add chili peppers and stir-fry until fragrant.
- 4
Pour in the meat and stir-fry a couple of times, then add water. Simmer with salt and dark soy sauce for 40 minutes.
- 5
Let it ferment on a flat surface for half an hour. Roll it into small cakes.
- 6
The steamed flatbread is golden on both sides.
- 7
The meat is stewed.
- 8
Chop the green peppers and meat finely.
- 9
Clamp the bun, and pour some soup over it.
- 10
Xiangxiang, eat.
