Rub toon sprouts
Shade-dried toon sprouts are kneaded by hand with plenty of salt until they soften and deepen in color, a rustic way to keep spring flavors.
Instructions
- 1

Wash the Chinese toon buds and scoop them out, then lay them in a cool place to dry (do not expose to direct sunlight, otherwise the buds will lose moisture and become soft and blackened).
- 2

Place the dried Toona sprouts in a clean, dry, and oil-free small bowl, and do not put too many at once. Sprinkle with fine salt, and the amount of fine salt should be relatively generous.
- 3

Gently rub the petiole part of the toon sprouts.
- 4

Rub until the toon shoots change color and the petioles become soft.
- 5

Gently knead the prepared toon sprouts one by one and place them in the prepared lidded container.
- 6

Place the container with toon sprouts in a cool place and let it sit for a week before taking it out to eat. The kneaded toon sprouts can be put in a jar or sealed in a food bag and frozen to be eaten in winter.
- 7

Pork bone soup, hand-rolled noodles, Chinese toon sprouts, hmm, sometimes happiness is just this simple.
