Salt and Pepper Crispy Pastry
Flaky-layered salt-and-pepper pastry: a fragrant hot-oil roux spread over yeasted dough, rolled, coiled and cooked until shatteringly crisp outside with peppery, savory layers within.
Instructions
- 1

First, make the oily pastry. Put the flour and pepper salt powder into a bowl.
- 2

Pour in hot oil.
- 3

Turn it into a flaky pastry dough.
- 4

Put 1 jin of flour into the basin, sprinkle in 5 grams of yeast powder and 10 grams of white sugar.
- 5

Add an appropriate amount of warm water and mix until it forms a crumbly dough.
- 6

Add 5 grams of lard and knead into a smooth dough.
- 7

The dough does not need to rest; just put it directly on the counter.
- 8

Roll the dough into a rectangle.
- 9

Spread on the shortening.
- 10

Roll from top to bottom.
- 11

After sealing, cut into small portions.
- 12

Then seal the cuts on both sides of the small dose tightly.
- 13

Make it like this.
- 14

Then shape it into a round ball like making a bun.
- 15

The prepared dough.
- 16

Brush the surface of the dough with water, then sprinkle with white sesame seeds.
- 17

Do all of them in order.
- 18

Roll it out into small pancakes again.
- 19

Fry the small cakes in the oil pan.
- 20

Pan-fry until golden brown and then flip.
- 21

After pan-frying both sides until golden, turn off the heat, cover with a lid, and let it cook with the residual heat in the pot for a few minutes before taking it out.
