Salt and Pepper Potato Chips
Paper-thin potato slices fried until glassy and crisp, then tossed with fragrant salt-and-pepper seasoning for an addictive homemade chip with a savory, tingling finish.
Instructions
- 1

Prepare 3 potatoes, cornstarch, and pepper salt seasoning
- 2

Wash the potatoes and shred them into slices using a grater.
- 3

Rinse the wiped potato slices with clean water to remove the starch, then soak them in water mixed with salt and white vinegar for 3–5 minutes. Bring a pot of water to a boil, blanch the potato slices until they become semi-transparent, and drain the water for later use.
- 4

Drain the water from the potato slices and evenly coat them with cornstarch.
- 5

Heat oil in a pan. When the oil reaches around 60% hot, add the potato slices to the pan one by one to fry.
- 6

After the potato slices float, use chopsticks to separate the slices that are stuck together, and fry the potato slices until set, then remove them.
- 7

When the oil temperature reaches 80% heat, put the potato slices back into the pot for a second fry.
- 8

Sprinkle an appropriate amount of pepper and salt evenly over the fried potato slices.
- 9

The crispy and tasty little snack is ready.
