Salted Edamame – Simple but There Are Also Small Exclusive Tips
Edamame pods bathe in a light salt brine perfumed with star anise and Sichuan peppercorn, a trick that keeps them bright green and evenly seasoned. Utterly simple, endlessly snackable, impossible to stop eating.
Instructions
- 1

Ingredients needed: edamame, star anise, Sichuan peppercorns, salt.
- 2

Rinse the edamame several times until clean.
- 3

Put a suitable amount of water in the pot, not too much, just enough to cover the edamame slightly. Add star anise and Sichuan peppercorns in cold water.
- 4

Add 2–3 spoons of powdered salt.
- 5

Heat until boiling, and use a spatula to stir and dissolve the salt at the bottom of the pot.
- 6

Cook for about 3 minutes.
- 7

Add the edamame and cook over medium-high heat for about ten minutes, until some of the pods start to crack. Pick two pods that haven't cracked and taste them; if there's no bean odor and the beans are cooked, it's ready.
- 8

Turn off the heat and quickly scoop out the edamame with a strainer, spreading them out in a container to cool.
- 9

The edamame and the soup should be cooled separately and thoroughly.
- 10

After it cools completely, use scissors to cut off both ends of the edamame.
- 11

Put everything into the broth after it has completely cooled to soak. If you like it slightly spicy, you can add a Thai chili; if not, just leave it out.
- 12

Done.
