Salted Pickled Green Beans - A Perfect Dish to Eat with Porridge

Salted Pickled Green Beans - A Perfect Dish to Eat with Porridge

Air-dried green beans are submerged in a spiced brine of Sichuan peppercorns, fennel seeds, and chilies inside a liquor-sterilized crock, staying crisp and intensely savory.

Instructions

    Wash the beans clean and then air-dry the surface;

  2. 2

    Chop the chili peppers into sections and slice the garlic. In a large bowl, put boiled or filtered cold water, and add Sichuan pepper peel, fennel seeds, salt, and chili peppers;

    This jar is called 'Qi Si Yi,' and it is best for pickling vegetables. After cleaning the inside of the jar, wipe it dry with a cloth, then use high-proof alcohol to wipe the inside of the jar to sterilize and prevent mold, and let it dry.

    Step image

    Add the green beans, then pour in the prepared water. If the water level is not enough, you can add some more cooled boiled water to maintain the water level. As for the amount of salt, it is enough if the water is relatively salty. At this point, we can see the chili and seasonings floating on the surface, while the beans remain submerged. Then pour in the high-proof liquor and stir a few times with a clean utensil.

    Cover it with a lid, fill the groove on the edge of the lid with water, and add some water every day to keep the water separating the inside of the jar from the outside air. But sometimes if you forget to add water, it’s not a big deal. If you live in a place with relatively good air, items will take longer to mold, and since the water is so salty, it’s not a serious problem.

    It takes about 15 to 20 days to be ready, and you can cut it into small pieces along with the pickled chili to stir-fry with meat or vegetables. It's very good with rice or porridge.

  7. 7
    Step image

    After removing from the tank, it can be stir-fried with meat, or stir-fried alone. Stir-frying it alone is most suitable for porridge. Cut the beans into small pieces, rinse them in clean water to remove the salty taste, then squeeze them slightly by hand after draining. Place them in a flat-bottomed pan, turn to low heat, and slowly stir-fry until dry. At this time, we can see a layer of powder sticking to the bottom, which is none other than the starch of the beans.

  8. 8
    Step image

    Scoop out the stir-fried dried beans and wash the pan. Cut the dried chili peppers into sections and put them in the pan. Heat the pan over low heat and add a little oil, slowly stir-frying the dried chili peppers to release their flavor. Then turn to high heat, pour in the stir-fried dried beans, sprinkle some cooking wine, add 1/4 teaspoon of sugar to adjust the taste, and stir-fry evenly before serving.
