Salted Plum Radish Strips
Radish strips are salted, then steeped for hours in a syrup of preserved plums, sugar, and light soy. Each bite carries a sweet-sour-salty depth with a whisper of smoky plum.
Instructions
- 1
Prepare all the materials.
- 2
Wash the white radish and cut it into strips with the skin on.
- 3
Sprinkle salt on the radish strips, mix well, and marinate for 20 minutes.
- 4
Mix light soy sauce, white sugar, and preserved plums to make plum juice, and add more white sugar.
- 5
Pour out the water from the pickled radish strips, and pour the plum sauce over the radish strips.
- 6
The radish strips need to soak in the preserved plum water for about three hours, stirring approximately every 20 minutes during this time to ensure the flavor is evenly absorbed.
