Sand crab juice
A rustic coastal condiment in which fresh sand crabs are pounded with salt, diluted with boiled water, and fermented under the sun to yield a briny, umami-rich seafood sauce.
Instructions
- 1

Let the sand crabs sit overnight to spit out the sand, then clean them thoroughly the next day.
- 2

Prepare some salt and a stick
- 3

Clean sand crabs are salted and then start being crushed
- 4

After being crushed, I didn't crush it finely enough.
- 5

Add the prepared cooled water into the basin containing the sand crabs.
- 6

Then put the sand crab juice in a sunny place to sun for three hours
- 7

Prepare a clean empty bottle. If you have a glass bottle at home, use it. I don't have one at home and am too lazy to go to the market to buy a new one.
- 8

Pour the sun-dried sand crab juice into a bottle. The bottle was too small, so I changed it to a 3-jin bottled water bottle. It can be eaten after three months.
