[Sauce-Crispy Radish Peel] ---- The most popular appetizer, delicious regardless of its humble origin
Strips of radish peel, usually destined for the compost, are instead transformed with salt, rock sugar, soy and wild chili brine into a famous crunchy appetizer.
Instructions
- 1

A large white radish, peel it and cut it into long strips (use the remaining radish for stew or braising).
- 2

Add an appropriate amount of salt and marinate for twenty minutes
- 3

Rinse the radish skins with cooled boiled water to remove the salt on the surface, then place them in a colander to drain.
- 4

Place the drained radish peels into a container, add a small amount of boiled water, a little rock sugar, three tablespoons of light soy sauce, three tablespoons of soy sauce, and about 100 grams of wild chili peppers along with chili juice.
- 5

The water level should basically be even with the radish skin.
- 6

Soak for 2-3 days, and it's best to use clean chopsticks to turn the radish skins occasionally in the middle, and that's it.
