Scallion and Ginger Hand-Shredded Chicken Thigh
Poached chicken thigh is chilled, torn by hand into rustic shreds, and dressed with a fragrant scallion-ginger oil, delivering juicy meat with a clean, aromatic finish.
Instructions
- 1

Three steps to remove fishy smell: scallions, ginger, and cooking wine.
- 2

Cover and cook for 20 minutes. Use chopsticks to poke the thickest part; if it goes through, it’s cooked.
- 3

Scoop it up with ice water, cool it quickly, and tear it by hand.
- 4

While waiting for the chicken drumsticks to cool down, make a scallion and ginger sauce. Heat the pan with oil, and when you see small bubbles forming, turn off the heat and pour it in (if you like it spicy, you can add some chili peppers before heating the oil).
- 5

1 spoon of light soy sauce, 1 spoon of oyster sauce, an appropriate amount of salt, mix evenly and it's ready.
- 6

Simple soul sauce.
- 7

Pour the sauce over the shredded chicken thighs and mix evenly, then you can start eating.
