Scallion Milk Cookies
Scallion Milk Cookies — powdered sugar, milk and low-gluten flour, baked until golden and crisp. A great choice for family gatherings or a weekend treat.
Instructions
- 1

Chop the green onions and let them air dry.
- 2

Cut the butter into small pieces and soften it, then mix in the powdered sugar (with starch) and salt until well combined.
- 3

Use an electric mixer at medium-high speed to beat until it reaches a whipped cream-like consistency (scrape down the butter from the sides of the bowl with a spatula and continue to whip evenly) (2-3 minutes in summer).
- 4

Add the milk in 3-4 portions and whip (scrape down the sides of the bowl with a spatula in between, then continue whipping evenly). The whipped butter should have a feather-like texture.
- 5

Pour in the sifted cake flour, use a spatula to cut and press from the side, and mix well. Add chopped green onions and fold evenly. Preheat the oven to 175 degrees.
- 6

Fill a piping bag fitted with a medium five-point star tip and pipe out flower shapes. Place a golden tray on the second-to-last rack of the oven and bake for 15-20 minutes.
