Scallop and Fresh Shrimp Fried Rice
Luxurious fried rice layered with golden shredded dried scallop, plump shrimp, and egg, where yolks coat each grain for a deeply savory, ocean-sweet flavor.
Instructions
- 1

Soak the dried scallops in warm water for 2 hours in advance.
- 2

After washing, tear it into strips.
- 3

Toss the fresh shrimp with salt, white pepper, and cornstarch until evenly coated; chop the vegetable stems and onion; crack 2 to 3 eggs, and have a bowl of leftover rice ready.
- 4

Heat oil in a pan, add the shrimp and stir-fry until it changes color, then remove. Add the scallops and stir-fry until golden, then remove.
- 5

Scramble the eggs and serve.
- 6

Pour the chopped vegetable stems and onions into the pot and sauté until fragrant.
- 7

Then pour in the rice that has been mixed with egg yolk in advance and stir-fry.
- 8

Then pour in all the side ingredients, add an appropriate amount of salt and oyster sauce for seasoning, stir-fry evenly, and it can be served.
