Sea cucumber-shaped aspic

Sea cucumber-shaped aspic

Blended and strained pork skin sets into porcelain-white jelly, molded into a playful sea-cucumber shape and tinted with squid ink powder for a clever banquet illusion.

Instructions

  1. 1
    Step image

Blanch the lard multiple times to remove the fat and clean it thoroughly.

  2. 2
    Step image

Cut the pork skin into thin strips.

  3. 3
    Step image

    Cook until soft again.

  4. 4
    Step image

Put it into the blender, ready to blend.

  5. 5
    Step image

Whisk it until it becomes a smooth, creamy texture.

  6. 6
    Step image

Pork skin broth is both delicate and pure white.

  7. 7
    Step image

This is the pork skin juice after being passed through a fine sieve (do not add too much water to the pork skin and water, otherwise it will not set; I forgot to weigh it).

  8. 8
    Step image

Add an appropriate amount of squid ink powder (purchased online) to the pork skin juice.

  9. 9
    Step image

Clean the mold, pour the well-mixed pig skin juice into the mold, and place it in the refrigerator to slowly solidify.

  10. 10
    Step image

Take them out one by one and plate them, then place them in serving cups. The bouncy pig skin jelly, which looks like sea cucumber, is very popular with the family.
