Seafood in Sauce
A chilled appetizer of assorted shellfish soaked in a bright, tangy sauce where lemon, chili and garlic cut through the brininess of clams and shrimp.
Instructions
- 1

How to buy seafood: shrimp, white clams, blood clams, razor clams, and Chinese clams; rinse them in water, add salt and cooking oil to the water, and purge the sand!
- 2

Cut the lemon into four pieces, remove the seeds, then slice it. Cut the chili into sections, slice the garlic, and chop the ginger into small pieces.
- 3

Put water in the pot, add seafood, ginger, green onions, and cooking wine. After the water boils, cook for a short time, then remove and rinse with cold water.
- 4

Set these two ingredients aside for now.
- 5

Prepare a sauce and place chili powder and white sesame seeds in a bowl.
- 6

Heat oil in a pan until hot and pour it into a bowl to release the aroma, then add two tablespoons of light soy sauce, half a tablespoon of dark soy sauce, one tablespoon of fragrant vinegar, one tablespoon of sugar, a small teaspoon of salt, a small teaspoon of oyster sauce, a little pepper, and two tablespoons of sesame oil.
- 7

Pour the well-mixed sauce into the lemon.
- 8

Put in half a bowl of mineral water and shake well.
- 9

Pour the sauce over the seafood, sprinkle with chopped cilantro, put it in the refrigerator for an hour and then take it out to eat for a better taste!
