Seaweed Buns
Coastal-style steamed buns filled with soaked seaweed and pork, where oceanic umami from the greens mingles with rendered lard richness for a uniquely briny, juicy filling.

Because it is salted seaweed, it needs to be soaked in water in advance to remove the saltiness. I bought salted wakame on a certain grocery platform, but there were some kelp edges mixed in to make up the quantity. There's nothing I can do, and I can't waste it anyway; it all tastes like the sea 😊 Soak it, wash it clean, and cut it into small pieces to set aside.

Cut the meat into small pieces. I used farmhouse pork, which has a lot of fat, so I rendered the fat into lard and didn't add any other oil. It's also because of this reason that it's especially delicious 😋.

Chop the green onions, ginger, and garlic into fine pieces. Use a normal small amount of green onions and ginger, but add more garlic. When steamed, the garlic's pungency disappears, leaving a special aroma that enhances the flavor. Here, I used one and a half bulbs.

Put all the prepared ingredients together and start mixing. Add soy sauce, oyster sauce, salt, chicken essence, a little white pepper, and five-spice powder. Finally, drizzle a little sesame oil, it's perfect~ You can start wrapping ✌.

It's inconvenient to take photos while making them because my hands were covered in dough, so I only took a photo after they were cooked. They're a bit deformed, but it doesn't affect the taste 😉.
