Secret Recipe Spicy Cabbage
Napa cabbage brined for a week gets coated in a fruity chili paste built on grated pear and apple, balancing sweetness, tang and gentle heat.
Instructions
- 1

Cut the Chinese cabbage, sprinkle with salt, rinse with water, and pickle for about a week. Adjust the saltiness to your taste; it should be a bit milder than typical pickled vegetables.
- 2

Finely chop the ginger and garlic
- 3

Wash two pears and an apple
- 4

Grate the apple and pear using a grater
- 5

Prepare small hot peppers
- 6

Prepare coarse chili peppers
- 7

Add two spoons of chili oil
- 8

Mix white sugar, vinegar, and MSG to create a sweet and sour flavor
- 9

Add water and make chili sauce
- 10

Put the cabbage into the chili sauce and spread the chili sauce onto the cabbage leaves.
- 11

Arrange the cabbage properly, then let it sit for another day! (This time, we made less chili sauce, so there isn’t much liquid, and we also added fewer small chili peppers, so the color isn’t as red and is a bit dull)
