Sesame Candy (Slices)
Black sesame and crushed peanuts are bound by molten sugar and malt syrup cooked to the hard-crack stage, then pressed into shatteringly crisp, nutty candy slices.
Instructions
- 1

Prepare 400 grams of cooked black sesame and 100 grams of crushed cooked peanuts.
- 2

Add 100 grams of water and 200 grams of sugar.
- 3

Add 200 grams of sugar.
- 4

Heat over low heat, allowing the sugar to slowly melt, do not stir during this time to prevent the syrup from crystallizing.
- 5

After the sugar is completely melted, add 300 grams of maltose.
- 6

Continue simmering over low heat.
- 7

Keep stirring.
- 8

Cook until the syrup reaches about 140–150 degrees. If you don't have a thermometer, you can drop a small amount of syrup into cold water. If the syrup solidifies quickly and is hard and crisp to bite, or if the first drop of syrup can be quickly pushed on the back of a knife, it indicates that the syrup is ready.
- 9

Let the sesame and peanuts cool for a minute, then quickly mix with the syrup.
- 10

Quickly mix the sesame and peanuts with the syrup, making sure each sesame and peanut is coated with syrup.
- 11

Line a baking tray with a sheet of parchment paper, and pour the mixed sesame and peanuts onto the tray.
- 12

Use a rolling pin to quickly roll it out while hot, trying to make the thickness as even as possible, about 0.5 cm thick.
- 13

Wait until the sesame candy has slightly cooled, but has not completely hardened.
- 14

Cut into slices of uniform size.
- 15

After the sesame chips have completely cooled, put them in a glass jar and seal for storage.
