Shredded Potato and Egg Pancake
Crisp-edged shredded potato and egg pancake where starchy potato ribbons bind with egg and flour, pan-fried until golden outside and tender inside with a lightly savory taste.
Instructions
- 1

Cut the potatoes into thin strips and rinse them lightly with water to remove excess starch. I'm used to doing it this way; it's fine if you don't rinse them.
- 2

Crack an egg and add an appropriate amount of flour.
- 3

Add a little salt and mix well. After mixing, I noticed that there seemed to be a bit too little flour, and fearing it wouldn't hold together when frying, I added some more flour.
- 4

After adding the flour and mixing it, it became like this after a while. No water was added, and there's quite a lot of batter!
- 5

Heat the skillet and add oil.
- 6

Pour in the potato slice batter and try to spread it evenly.
- 7

When pan-frying the first side, you can shake the pan to see if it has set. Once it has set, flip it to fry the other side.
- 8

Fry back and forth until it's just right! It's even tastier with some ketchup when served!
