Shredded Radish, Japanese Tofu, and Shrimp Soup
Shrimp are boiled to make a sweet stock, then combined with blanched radish shreds and silky Japanese egg tofu for a light, umami-rich soup with a clean finish.
Instructions
- 1
Prepare the raw materials. Wash the sea shrimp, pour an appropriate amount of water into a pot, add the sea shrimp, and cook until done. Remove them. Set aside the Japanese tofu and radish.
- 2
Boil water in a pot and add the cleaned shredded radish for blanching. You can add a little salt. Do not blanch for too long as it affects the taste and easily causes nutrient loss.
- 3
After blanching the shredded radish, immediately put it into cold water to cool, then drain the water.
- 4
The star of this bowl of soup is the cooked shrimp broth, which is what gives it its flavor.
- 5
Cut the Japanese tofu into cubes
- 6
Wash the chopped green onions and cilantro and set aside.
- 7
Pour an appropriate amount of cooking oil into the pan, heat it, and add the green onions, ginger, and garlic to stir-fry until fragrant.
- 8
Add an appropriate amount of water and the cooked shrimp broth, and bring to a boil over high heat.
- 9
Add the shredded radish and small sea shrimp and cook on high heat
- 10
Add Japanese tofu and salt at the same time
- 11
Once the sauce has boiled, add chopped green onions and cilantro to enhance the flavor, then it's ready to serve and enjoy.
