Shrimp Ball and Enoki Mushroom Miso Soup Exclusive
A Japanese-style miso soup with shrimp balls and enoki mushrooms, built on a quick dashi of bonito and dried shrimp, with white miso swirled in off the heat.
Instructions
- 1

Remove the shrimp vein from the shrimp and cut along the back.
- 2

Preparation of ingredients: a small handful of enoki mushrooms, 8 shrimp, tender kelp soaked, cherry tofu cut into pieces, a small spoon of dried bonito flakes and dried shrimp, a spoon of chopped green onions, 40g of white miso dissolved in 2 spoons of warm water.
- 3

Add 300g of water to the pot, then add dried bonito flakes and dried shrimp and bring to a boil (temporarily boil the soup with bonito flakes and dried shrimp as a substitute for broth. If you have fish bones or fish stock, that's even better).
- 4

Next, add the soaked seaweed along with its water into the pot, and after the pot boils, add the shrimp and cherry tofu.
- 5

After boiling again, add enoki mushrooms and blanch until cooked.
- 6

Finally, pour in the dissolved white miso, no need to bring it to a boil (the picture was taken when being lazy, just scooping a spoonful directly into the soup). Boiling miso will, first, cause nutrient loss, and second, make the soup cloudy.
- 7

Finally, sprinkle with chopped green onions.
- 8

The taste is very tempting.
