Shrimp, Mushroom, and Tofu Soup
A gentle everyday soup of marinated shrimp, hand-torn tofu, and sliced mushrooms simmered with ginger in a lightly seasoned broth, finished with baby greens for freshness and tenderness.
Instructions
- 1

Remove the vein from the shrimp, mix with salt and cooking wine, and marinate for 10 minutes. Wash the tofu, mushrooms, and bok choy.
- 2

Break the tofu into small pieces (not sliced), slice the mushrooms, and shred the ginger.
- 3

Add oil to the pan, sauté the shredded ginger over low heat until fragrant, then add the shrimp and stir-fry until it changes color.
- 4

Add the mushrooms and stir-fry
- 5

Add water, put in the tofu to braise, adding salt mainly to let the tofu absorb the flavor.
- 6

Add the baby bok choy and cook together
- 7

No need for too much seasoning; this bowl of soup is already very flavorful.
