Shrimp Paste Loofah Soup
A delicate soup of loofah softened in shrimp-head oil, poached with hand-formed shrimp paste balls for a sweet, springy seafood broth.
Instructions
- 1

Remove the heads and veins of the shrimp and set aside
- 2

After peeling the loofah, divide it into 4 parts and cut into pieces
- 3

Chop the large shrimp, then use the back of the knife to turn them into minced shrimp. Then add cooking wine, light soy sauce, five-spice powder, oyster sauce, and beat in an egg white until frothy, and marinate for a while.
- 4

Add oil to the pot, put in the scallions, then add the shrimp heads and stir-fry to release the shrimp oil, then add the sponge gourd and stir-fry until soft before adding water
- 5

Use a spoon to form the shrimp paste into balls and put them into the pot, then take out the shrimp heads.
- 6

After the water boils, add the corn kernels, then add light soy sauce and oyster sauce to adjust the flavor.
- 7

Finally, add a little water-starch mixture, and it can be served.
