Shrimp Wonton
Delicate thin-skinned wontons filled with finely minced shrimp whipped with egg white, starch, and seasonings until springy, briefly boiled so the wrappers stay silky while the filling bounces with each bite.
Instructions
- 1

After buying the shrimp, remove the shells and the shrimp veins.
- 2

After cleaning thoroughly, chop it finely with the back of a knife.
- 3

Add 1 egg white, cooking wine, black pepper, and a little salt to the shrimp meat, then add 1 teaspoon of starch. Stir evenly in a clockwise direction and then beat until firm.
- 4

Take a small wonton wrapper, put some shrimp on it. The filling for small wontons shouldn't be too much, because the wrapper is thin and the cooking time is short; if there's too much filling, it might not cook through.
- 5

After placing the filling inside, lift the four corners toward the center, then gently pinch them together. Once all are wrapped, place them on a plate.
- 6

Pour an appropriate amount of water into the pot; the amount of water can be determined based on the number of wontons being cooked.
- 7

After it boils, add the wrapped small wontons and gently stir them with a spoon. When it boils again and the wonton skins become translucent, you can turn off the heat.
- 8

Then scoop the small wontons into the prepared soup bowls, and sprinkle with chopped green onions.
