Grass carp fillets are gently poached in a rich broth with pickled mustard greens, then topped with garlic, cilantro and hot oil for a classic Sichuan dish that is sour, aromatic and irresistibly tender.
Instructions
- 1

Preparing marinated fish: Remove the entrails and slice about 1.5kg of live fish, then marinate with 15g of Jin Gong Superior Soup Pickled Fish seasoning for 3–5 minutes and set aside.
- 2

Heat the pan, add an appropriate amount of cooking oil, pour the fish slices into the pan and fry until slightly cooked, then remove them.

Fragrant Stir-Fried Pickled Vegetables: Heat 200-250g of oil in a pan, stir-fry the Jin Gong Superior Soup Pickled Fish Vegetables package until fragrant, add about 0.8-1kg of water or broth to the pan and bring to a boil, then add the Jin Gong Superior Soup Pickled Fish seasoning package and bring it to a boil.

Fish in Superior Soup: First, add the fish head and cook for 1 minute, then add the fish fillet and cook for 0.5 minutes, after that, add the fish slices and continue cooking for 1–2 minutes before serving.

The final step, to enhance the aroma, you can add an extra step of drizzling oil! Put the needed condiments like minced garlic and chopped green onions into a bowl, then heat the oil and drizzle it over the fish to make it fragrant.
