Simmer fish soup
A concentrated fish soup where pan-fried fish is pressure-simmered with ginger and scallion for an hour, then strained into a rich, milky, deeply flavorful broth.
Instructions
- 1

Prepare the ingredients.
- 2

Rinse the blood water clean, add cooking wine and salt for a while.
- 3

Heat the pan and add oil (hot pan, cold oil).
- 4

When the oil is seventy percent hot, add the fish to pan-fry.
- 5

Sear for a while, then flip.
- 6

Transfer to the electric pressure cooker, add water (a little more than usual), ginger slices, and scallions.
- 7

Simmer for an hour, and it's done.
- 8

Use a spoon to drain the fish soup, and discard the fish skin and fish bone residue.
- 9

A rich fish soup would be fine.
- 10

Drinking it directly or using it for cooking is both pretty good.
