Simple and Delicious Way to Cook Bamboo Clams / Bamboo Clams with Sauce
Bamboo clams are coaxed to spit their sand, briefly blanched with ginger and scallion, and served with a bright dipping broth. Sweet, briny shellfish at its most straightforward and satisfying.
Instructions
- 1

Prepare the ingredients.
- 2

Slice the ginger and chop the green onions; first, rinse the razor clams thoroughly with clean water, then prepare a basin of clean water and dissolve an appropriate amount of salt in it. Next, place the cleaned razor clams into the basin and let them sit for 2-3 hours, making sure to change the water three times during this period (about once every half hour) and rub them several times with clean water to make them expel the sand inside.
- 3

Add an appropriate amount of water to a pot, put in slices of ginger, and bring to a boil. Then put the razor clams into the boiling water to blanch, adding cooking wine to remove the fishy smell. Blanch for about 1 minute, then take out the razor clam meat, tear off the black line on top, remove the black 'sand sac,' and squeeze the clam’s siphon by hand to push out the dirt inside. Finally, rinse it clean with water.
- 4

Finally, rinse the bamboo clams once with boiling water before plating. Prepare the dipping sauce: mix 3 spoons of seafood dipping sauce, 1 gram of sugar, a little sesame oil, and chopped green onions together and stir evenly.
- 5

Pour the sauce into the plate.
