Simple little pickles
A humble farmhouse relish combining diced pork, soybeans, peanuts and dried radish, braised in soy sauce with whole spices until the liquid reduces into a concentrated, savory condiment.
Instructions
- 1

Cut the lean meat into small cubes, and slice the green onions and ginger.
- 2

Wash the beans and peanuts clean, and soak them in cold water for an hour. Cut the soaked dried radish into pieces the size of peanuts.
- 3

Pour oil into the pan, and when the oil is hot, stir-fry the meat with green onions and ginger.
- 4

Stir-fry beans, peanuts, and dried radish. Add water until it covers the beans, then pour in soy sauce, Sichuan pepper, and star anise. Boil over high heat, then turn to medium heat, cook until the liquid is gone, and add salt before taking it off the heat.
- 5

Put it in a container and take it as you eat.
